Easy Camping Meals {Our Simple But Delicious Menu}

If you missed my most recent post about our fun camping trip at the Texas State Railroad, go HERE to read it! The next most important thing after planning our camping trip and figuring out where we were going to sleep was planning out our meals for the whole trip.  This made it easier to make sure we had everything we needed and left the guesswork out of what I would be making for dinner every night.  If you know me, you know I hate wasting any food so I madesure to plan meals where leftovers could be used for another meal on anotherday. We had minimal cooler space and a refrigerator that basically frozeeverything but I was able to make it work just fine! Here is what my meal plan & menu looked like: Wednesday dinner : Hamburgers with Baked Potatoes Thursday : Breakfast-Egg, Ham, & Cheese Bagel Sandwiches Lunch- Sandwiches Dinner- Chicken & Veggie Kabobs with baked sweetpotatoes, plus link sausage for the kids. Texas State Railroad Camping Trip 2019

In Texas, you always start out any roadtrip by visiting the famous Buc-ees! It’s only been about 2 months but I’m finally getting around to writing about our camping trip this past October.  My husband and I have always wanted to take the kids camping since we both grew up having a fun time traveling and camping with our families. This year was the first time we could actually plan a trip since my husband now works for himself and can take off of work anytime he wants!  I started planning our trip shortly after Victoria was born and decided on going to the Texas State Railroad in east Texas so the kids could experience riding on one of their favorite things, a train!                 Iactually heard about the Texas State Railroad after reading one of Texas’stravel books.
